 clafani Bagni is a medieval town. It was built by the powerful House of Sclafani, on what was probably the site of a Byzantine settlement. Although it changed hands several times in the course of centuries, its name was never changed. Today its territory corresponds almost entirely to the area of the Contea di Sclafani D.O.C., a 1996 appellation that is divided between the provinces of Caltanissetta and Agrigento, in Sicily.The geological and climatic conditions here have always been considered ideal for winegrowing, although for many centuries the feudal agricultural system favored quantity over quality. In the '70s, however, the vintners, who had finally become owners of the land, started taking an interest in the quality aspects of their production. The first results were very encouraging and the winegrowers started a race that has pushed them into two opposing directions: on one side they are almost obsessed with all that is new to this land (such as Chardonnay, Pinot Blanc, Sauvignon, Syrah and Cabernet Sauvignon grapevines or experimental techniques imported from northern Italy, like second fermentation or carbonic maceration for the production of Novello wines), and on the other, they are entirely committed to the qualification of traditional grape varieties, which are no longer mixed indistinctly, but vinified separately so that they can best express their distinctive features.
