he Italia variety of table grapes was introduced in the first half of the twentieth century, though
the tradition of tending the vine had existed for many centuries before. Uva da Tavola di Canicattã
grapes are large and come in medium- or large-sized bunches. The flesh of the grape is substantial
and pithy with a subtle musty flavour. The grapes are pale yellow or yellow-greenish. Various
pedological, climatic and agricultural criteria which determine the distinctive characteristics of the
grape are used in determining which geographical areas can be certified as typical and suitable
cultivation zones. The specialised techniques for the prolonged harvesting of the fruit are
particularly important as they protect its organoleptic qualities. The distinctly Mediterranean clime
affects the local growing practices. This type of grape is renowned for its high quality. Sixty per
cent of production is consumed in Italy and forty per cent abroad. The production zone includes
numerous town districts in the provinces of Agrigento and Caltanissetta.
