his is a dialect name from the Val Brembana (near Bergamo). Mut means mountain, and the mountains in this area are, of course, the Alps. It is in the upland summer pastures at an elevation of between 1,200 and 2,500 metres that the highest quality Formai de Mut dell'Alta Val Brembana is made. Historical documents from the sixteenth century show that in the mountains above the Brembana valley cattle-rearing has been a main economic staple for a long time. The production of Formai de Mut dell'Alta Val Brembana was stepped up considerably after 1950 when a group of farmers set up a small dairy which they operated in shifts. For years, the dairy processed milk for five months of the year, and it was not until 1988 that the dairy began to produce the cheese all year round. Formai de Mut is a cylindrical, semi-cooked, full-fat semi-hard cheese made of whole cow's milk. It is produced in many town districts in the province of Bergamo.
