live groves have existed on the shores of the Sebino and Lario lakes for centuries. There are historical traces on the shores of Lake Vello in the Marone district. There are also many documents and censuses carried out in the town districts indicating the presence of an olive oil industry. Most of all, there are the remains of an ancient oil mill in Sebino. Olio Extravergine d'Oliva Laghi Lombardi has a maximum acidity of 0.55 percent. The colour ranges from green to yellow. The scent is medium or lightly fruity. The taste is fruity with subtle bitter and peppery tones. The major olive varieties used are Casaliva, Frantoio and Leccino. The cultivation of olives in the region of Lombardy is amply justified by the particular climatic conditions in the areas around Lakes Sebino and Lario which are highly conducive to the establishment of a fully-fledged olive oil-producing industry and endow the final product with special organoleptic and chemical qualities. Olive-growing is second nature to the inhabitants of the area who have always prized their local produce. The presence of olive groves softens the landscape of the lakes. The production zone is situated within the provinces of Brescia, Bergamo, Como and Lecco.
