here are fossil remains from the Cretaceous Period that suggest olives were cultivated in the Garda area in prehistoric times. In the Bronze Age, the inhabitants of the pile dwellings on Lake Garda made use of the olive, as proved by the discovery of olive stones among earthenware remains discovered in Pacengo. The lake area of Garda contains the remains of an oil-mill from Roman times, proof that an oil-milling industry existed at the time. There are plentiful historical documents from the Middle Ages to the present day attesting to the importance of the olive in the Garda area. There are also allusions by Italian and foreign writers such as D'Annunzio and Goethe. Olio Extravergine d'Oliva Garda has a maximum acidity of 0.60 percent. Its colour ranges from green to yellow. The scent is medium to lightly fruity, and the taste is fruity with peppery, bitter and almond tones. The major olive varieties used are Casaliva, Frantoio, Leccino and Pendolino. Olive-growing in Garda benefits from the microclimate of the area which is determined by the presence of pre-Alpine lakes which mitigate the effects of an environment that would otherwise be inimical to the fruit. The groves are planted in hilly zones, sometimes arranged in terraces which give the countryside a rather attractive and original aspect and add to its tourist appeal. The production zone touches the provinces of Brescia, Verona, Mantua and Trento all of which contain lands that overlook the Lake Garda basin.
