he cultivation of the olive in the province of Foggia goes back at least to Roman times. Dauno is the adjective from Daunia, the Latin name for the territory now known as Foggia. In later ages, the commerce of olive oil, which was mostly conducted by sea, expanded. Olio Extravergine d'Oliva Dauno has a maximum acidity of 0.60 percent. Its colour ranges from green to yellow, the scent and taste are fruity, sometimes with a slight peppery or bitter tones. The expansion of olive-growing throughout the province of Foggia led to a geographical differentiation between four areas of production which, though they operate as part of a common production matrix, have their own individual identities based partly on the blend of varieties they use to produce their oil and partly on their orographic features. The names of these four mountain zones are added to the Dauno designation to make: Dauno Alto Tavoliere, Dauno Basso Tavoliere, Dauno Gargano and Dauno sub-Appennino. The area of production entitled to the Dauno designation includes the whole province of Foggia.
